Raw Fudge Cake

And just when you thought that indulgence can't be healthy I am here to prove you otherwise.

Ingredients

14 Dates

cup of Raisins (cherries, goji berries as an alternative if you wish)

1/2 cup of Raw cacao powder

1/4 cup of Coconut oil

1 1/2 cups of Walnuts (but any nuts will do)

qtr tsp of cinnamon

Soak your nuts in water over night, rinse and let them dry thoroughly. If you have dehydrator then this is the perfect tool to use otherwise soak three days prior to making this cake so your nuts can fully dry.

Place 14 dates into the food processor together with raisins and coconut oil. Add qrt tsp of cinnamon and half a cup of cacao powder and mix all together. Place the mixture into a glass ball and work your walnuts in with your hands. Use baking powder over larger chopping board and flatten your mixture to desired thickness. I find best if you use the free edge of the baking paper, fold over the mixture and with rolling pin flatten the mixture breaking the nuts as go along. Place the rolled out mixture still in its baking paper fold into fridge for an hour or freezer for 30mins. 

I then prefer to use dough cutter and cut the fudge into small squares. Now ready to serve you just need cup of tea in your other hand.
