Detox Broccoli, Spinach & Coconut Soup

Winter is finally here in full force so we are focusing on including warm yet nutritional meals into our diets. Soup is the perfect winter filler meal packed with nutriets & vitamins. We have taken inspiration from health food guru Madeline Shaw and her delicious Detox Coconut & Broccolli Soup. It's creamy without having to add dairy, full of goodness & super tasty too.

Ingredients

1 white onion
1 tbsp of coconut oil
2 cloves of garlic
1 tbsp of freshly grated ginger
1/2 red chilli
1 head of broccoli
1 cup of spinach
1 can of coconut milk
1 can of coconut milk
200ml of vegetable stock

Directions

Chop the onion and red chilli finely. Heat the coconut oil in a large pot and sauté the onions with a pinch of salt for 5 minutes until golden. Add the garlic, ginger, chilli and continue to sautée for 2 minutes.

While this is cooking, chop up the broccoli and prepare the spinach, which you can then add to the onion mix. Stir for 30 seconds with a pinch of salt then pour over the coconut milk and veggie stock. Simmer for 20 minutes then blend until smooth.

Top with fresh herbs, nuts and seeds for added omega goodness... we used chia seeds!
